We tested 4 different substrates: chicken, fish, cheese sticks and mushrooms with our Gluten Free Rice Panko Bread crumbs on industrial scale food processing equipment. The procedure consisted of a pre-dust, batter, bread and par-fry. From here the products were frozen and both baked and fried to test performance.
Our testing confirmed that Homai Gluten Free Rice Panko bread crumb provides superior performance over wheat based crumb. With the application of a pre-dust and a batter mix the crumb provides uniform, complete coverage with strong adhesive properties in each stage and excellent durability.
